Wear your pistol on your non-throttle hand side, and shoot the dog, that way the problem won't reoccur.

I guess the vary the speed thing is the way to go though, although I never had to use it. You might also call the animal control and give them the address regarding an unrestrained dog.

Thankfully you didn't hit the deer while it was on its' feet. Ended my season early due to doing just that.
