You could also just try giving it a fist full of revs before feeding the cluctch out.

it appears to be a carbed bike, so could be worth location the idle screw on the side of the carb and giving it a turn until the RPM picks up

that does seem a very low idle

Rubiadiabla is right on the money, especially about getting some classes if your confidence is not all there. I did some extra when I had a loss of confidence some years ago. Made a huge difference to my riding. The one thing I will add to the above is you don't need anyones permission but your own....

I don't have a set routine. The most the GPZ probably gets is 30 seconds; enough time to stow the keys in my tank bag and get my gloves on.

If I can roll off the throttle without the engine dying it's ready to ride.

A lot depends on your leg length rather than your total height. I've got a 34" inside leg and I am comfortable on most commuter bikes. My GB is absolutely tiny, as was my CG125 - I just couldnt take passengers. Blues advise about getting yourself sat on as many bikes as possible is really the best, ...
