So I'm working on turning the old CB360 into a cafe and I've seen some online that have a more modern sport bike look to the tires. Can you put a somewhat larger tire on the stock rims or do I need different rims etc?

If you put a larger tire on it (not a stock for the bike), then you need to find a rim of the correct width. Or you could put some Bridgestone S11 (that look modern) that are the correct size for the bike.
