Bike running like crap

So I have a 03 Honda shadow spirit vt750dc stock air box aftermarket exhaust with after market baffles “put in baffles recently due to mechanic telling me I had to have them for back pressure” any way my bike has slow throttle response idles ok but about 30 to 40 mph it wants to bog out and sputter I have adjusted floats to 7mm (spec) the needles are third notch with one shim each main jets are 103/106 and 40 it smells like its running rich the plugs are wet sometimes sometimes dry and sooty I’m just trying to get this figured out any help will be awesome thanks
