SS1000 / Bunburner Attempt

Well, last year (or so) I'd expressed some interest in doing the SS1000. I've got a route planned out and days off and soon I'll have be spending a lot of time alone on the bike.
Time alone is hard to come by when you've got 4 kids.
So, the run will be starting at 4:30AM in Clark or Linden NJ on next Friday and hopefully rounding out the first 1000 miles (or so) down in Florida either in Ormond Beach or Titusville Florida. The 4:30AM leave time is dictated by my first gas station stop - they don't open until 6:30AM and it is about 100 miles away.
Day 2 - will be just 500 miles on the way back to make the BunBurner attribute.
Before we start up with Inventories at my company and it gets too cold up here - I want to get this done.
I've reserved Friday, Monday and Tuesday off. I've also been toying with the idea of going further south on the second day and making it down to Key West or something, but I suspect I'll need to rest the Tuesday before returning to work.
My bike is essentially new, I need to adjust the chain before starting off. It has had its first maintenance done on it, tires look good and should still have a couple more thousand miles on them to go. I'm a very sedate rider, so I don't actually think I wear the tires a lot.
One problem is that my estimated time of arrival in Florida may be outside the times that the gas stations down there are open.
I'm getting a GPS tracking device that will report to a website my location and it has a 911 feature on it - so if I get in to trouble...

After the $97 I have to buy the service for 911 and tracking.
So, it looks like a great adventure.
I'm getting together all my supplies. Any suggestions would be great.
I've got a compressor and slime on the way for flat tires. My wife is checking on adding Motorcycle coverage to our AAA account.
I have some allen wrench sockets, a socket wrench, I'm going to see if I can get my old saddle bags on the bike + my tail bag.
I'll be bringing a camera, lots of batteries, but I don't think I'm going to record any video this trup. My grandiose idea is to video record an entire SS1000, but not this first one.
We'll see if I buy the mounting hardware I could have it by the time I leave.
I'm looking for some good containers for water to go in to my packs.
