Triumph Thruxton 900 - Beautiful factory cafe machine.
Ducati S2R 800 = Oh so pretty, and functional too!

I'm torn between the Thruxton and actually making a cafe racer myself... but whenever I look at the pictures (or better yet, go sit on one), I say to myself "why go through all that trouble when Triumph does it for me?"

Hrm, good question.

Bimota Testi 1-D EF because...well, almost no one has one and the under chassi steering was sweet.
RC211V for the race track because from what I've heard it's about as refined as you can get for a track bike.
