Does anyone know how fast the bike in the second video was going?

I just looked at that vid again, and it does look intentional. He paced her, sped up and timed it perfect so she had virtually no where to go.

Pulling the parking brake at freeway speed is something normal people dont do, it seems too calculated.

It looked to me that she did have an escape route, between the two cars in the last second. If she swerved further to the right and accelerated sharply she could have threaded the needle so to speak. I dont think I could have done it, but I would sure try my best if I were put in that situation. All in all she did a good job of minimizing damage to herself though. Getting through that unscathed would take a great deal of luck as well as skill. I am glad she is OK, and hope that dirtbag gets some time for this as he obviously has no money to even buy insurance.

I have actually encountered a situation somewhat similar on the freeway, some cager on a cell was not paying attention to traffic ahead, and locked up his brakes to keep from "O Ring" ending a semi.
Having been paying attention myself, I actually stopped from 45-50 mph, standing my bike on it's nose in the process.
I am not sure if I would have been better off hitting the guy, as I got "O Ring" ended by the car following me.
You can't control all of the situations, all you can do is try to eliminate as many risks as possible. I hope that the rider in the first video continues to ride, and the uninsured cager that hit her, has a couple of years in a cell to think about it.
