For sporty touring I'd go with a Multistrada 1000/1100, or the new Triumph Tiger 1050. They are both road oriented 'adventure' bikes, with sport engines tuned for midrange, an upright riding position, hard bags available, and a mid level of fairing protection from the elements.
Having [briefly] ridden the Multristrada 1000, I can tell you it is all the bike I could ever want. This one had its drive sprocket changed to lower the gearing, and it pulled hard enough to wheelie in third gear. Considering this, I would not lower the gearing for some time before getting used to it.
Yamaha FZ1 seems to fit into this category, with more power, and more emphasis on sport. From what I've read, there is a small fix available for the snatchy fueling on low-rpm roll-ons.
The V-Strom DL1000 is more rough-road oriented, and by most accounts an excellent all arounder, maybe less so for trackdays, but I guess you can track day anything, can't you?
And there are 600-650 versions of the Multistrada, V'strom, and FZ.
Those are my picks, with the Tiger leading the charge, based only on looks, and the thought of a screaming, torqy, British triple 1050 engine.

Motorcycle Consumer News (same place David Hough writes his articles) did a comparison on the strom, tiger and something else. Anyway- it's readily available on the website mcnews.com and I do recall them liking the strom the best. It's surprisingly flickable and for it's height and size that makes it even more fun.
