carb tuning!

Hey, I need a primer on tuning carbs! I have a GS500 and a porsche 914 that are both carburetted but I've never had a good idea how to tune them. Just been going by what my Dad taught me... run it lean until it nearly starves out then enrich the mixture just a little. I haven't played with the carbs on the GS500 yet, I only just got it last weekend and it needs some cleaning and tuning as it's idling between 3000-5000 rpm... but while I'm in there I want to do a good pre-tune on them and get the bike running tip-top. Can anyone explain this easily? Or recommend a book I can pick up? I ordered a clymers but it's still about a week away.
