I don't know where to eat in "
Nawlins" (ugh) but as a New Orleans native, I can recommend a whole bunch of places. You can also just ask people there...most new orleanians will tell you where to go, and why it's better than any other restaurant.
Where are you staying exactly? If in/near the quarter, there's a ton of good places for seafood or cajun. If you're going strictly for cajun, go to Mulate's. They have a dance floor and usually have a live band. (and also usually cajun mothers who'll teach you the two-step)

Maspero's, 440 Chartres St, cajun/seafood
Mother's, corner of Poydras and Tchoupitoulas, poboy's/sandwiches
Deanie's, 841 Iberville (the best seafood in NO)

and of course, you
must go to Cafe du Monde for the beignets (800 Decatur)...just don't wear black to eat there....you'll see what I mean after you're done
