Thanks to everyone who helped me. I ended up going with a 2001 Yamaha V-Star 650 Classic. I'm heading out today; I hope everything works out!

Just thought I should add that I made the trip down from Fairbanks to Tucson successfully, without any major debacles. Thanks again to your guys efforts in guiding me towards the right bike as I was figuring everything out (now time to find a job... ugh).
