Ok so here's a stupid question. You're supposed to hit the apex going into a curve, right? Is this for every day riding or just race tracks? It would seem to me that if you hit an apex going around a curve on the streets, you'd get smacked by the car in the other lane if you were on the outside right lane furthest away from the bend.
Now I'm not talking about either car going out of their lane. But when you lean wouldn't you lean over into the other lane a bit when hitting the apex?
Or am I missing something?
I really need to get a bike so I can start seeing all this for myself and not just thinking about it. Job starts in three weeks.

Apex is just the highest point of a curve. So every time you turn you hit an apex, where the apex is depends on the line you take through the corner.
Of course I'm generalizing from a single example here, but everyone does that. At least I do.

Even if you considered your lane the whole road (to avoid hitting cars) apex type cornering is all wrong for the road.
Visibility is the key to survival as we all know, so if you hit the apex on every turn the majority of the time you will be going in blind. Also if you happen to run a touch wide you are straight into oncoming traffic as apex cornering will bring you out on the outside edge of your lane.

If you take the green line you have a lot more of an idea as to what is coming the other way (in your lane or otherwise) with the added bonus of a tighter corner.

On the street, touching the apex of a corner is usually a bad idea. It doesn't allow you much margin of error in case something unexpected comes up (gravel, livestock, car in your lane, etc...). So doing a "late apex" is the way to go - you still take a motorcycle-corner to minimize cornering but have a safety cushion.
On a track, most of the time, you want to hit the apex. Of course, it depends on the track, the fastest line does not necessarily hit the apex of the corner (this S-turns).
