As for the Adam's apple, I have yet to catch any kind of object with it in 12,000+ miles of riding last season, or any of this season. If your jacket has a collar, it should keep the undesirables from denting your throat. If not, a kind of neck warmer could work, but it'd be toasty above about 60 degrees F.
