I actually wish something like this happened to me (get some crazy good deal on some popular sportbike)...Then I could afford all the mods and such that I do to my GS 
I second (or third, fourth, whatever) the advice to sell it and get something like a GS.
If you could sell the 750 for 5 or 6k, then you could buy a used GS500 or EX-500 for $1500 or $2000, and keep the rest for training, gear, gas etc etc.
