I would take a BMW R 1200 GS (Adventure) with all-terrains, and convert it for hydrogen usage. Retrofit the gas tank with 2 chambers and an electrolysis unit, pour water in one side, pop out the solar panels and let it sit for a few hours, hydrogen fills the other side of the tank, and some simple FI modifications would burn the hydrogen just like gasoline (just a different AF ratio).
It already has 100 hp, 85 ft/lbs, 8.7 gallon tank, and a driveshaft. Not to mention those air/oil cooled boxer twins are easy as sin to work on, and they run forever!
(On a semi-related note, I'd love to get my hands on one of those sexy K1200R's)

Definatly the BMW F650 DAKAR, an amazing looking bike that goes off road well with good torque and being german it can withstand anything.
