When it comes to keeping your bike healthy... theres no way its a waste of money. And actually, 75 bucks for a 600mi. service sounds VERY reasonable, I bet there are some ducati owners out there shaking their fists violently over this. do an oil change asap, and also your first maintance will be at 600 miles. I don't know how much it would cost though... I did all my own work.
As an update, today I got that 600 mi. service done. All was well, chain lubed, oil changed. Was charged for 0.75 hour, oil and filter for a total of ~75 dollars. Yes there was basically a lot of money wasted, but I am glad a trained eye gave everything the OK and I think the peace of mind was worth it (for me.) Ride was beautiful by the way.

If you are still interested in learning more about the inner workings of your bike, you can always buy a clymer or haynes manual for the gpz500/ex500/ninja 500r. just make sure its for this style of bike after the 1994 model year, as its the current generation. (not much changed, but still better to have the book for the exact bike you own)
