Talk to her about the MSF, agree to wear safety gear and take her shopping for bikes with you.
My wife said that getting her involved in the decision making made her feel a lot better about the whole idea. She even went to a bike show with me this year and had a wonderful time despite herself. She didn't think she'd enjoy it but, once we got there, she actually sat on some bikes and pointed things out to me that she liked, didn't like, etc.
She's even thinking about getting her own bike in a year or two. I'm hoping she'll take mine and I'll get the new bike...
From an accident point of view as a paramedic, I can tell you that the majority of accidents involving motorcycles that I've been to have been alcohol related. The next most common have been riders striking deer.
