I started on the best beginner bike ever probably, the rebel 450. Small enough that you can learn easy and then later, thanks to those 6 gears (which I miss
) could easily go 80 on the highway purrring, wonderful bike. Honda should scratch the 250 and bring back that parallel twin 450.

I owned an 82 650 nighthawk for a few years. Given your size and that you already have "a little" riding epxeprience, I think that would be a decent starter bike for you that you can easily grow into without being in over your head to start out.
