Call the class people. Usually the boots MUST be of leather and can not be high top type hiking boots.
You should use gloves that are not too bulky, you should be able to reach the grips and work the controls without over working your hands - or they will tire out too easily. Go to a motorcycle shop and try some on.
Ultimately the glaves and the jacket should be the same, as in not too bulky, you should be able to move without being too constricted not to omuch bulk. Enough cover to keep you warm but not overheat. Good luck on your class. I wish you all the best and hope you pass with flying colors
