Um, I have a feeling this won't be very helpful, but it's just like a car; it depends. On how much you want to accelerate, are you on an incline or decline, how much weight are you carrying, etc. There should be a rough range of speeds per gear in the bike's manual. You can also check the bike's specs for the torque peak; I usually shift mine at around that point. Anyway, it's just natural that the more you ride the bike, the more familiar you'll be with what engine speed is it "happiest" to shift.

You'll get to know your bike and it's preferences pretty well over time. Congratulations, it looks excellent. I especially love the pic of it between the 2 cars--it looks like a race horse ready to shoot the gate!
