I gave myself a self-induced fuel starvation issue last year which acted just like you are describing. No hiss from the tank cap but it would miss and buck after a few minutes above 50 mph.
The easy test for venting is to ride with the fill cap loose. (be sure the tank isn't real full.....)
(My bike has an electric solenoid that opens the vent when the key is on and shuts it when the key is off. I'd failed to completely connect the wires to it the previous time I'd worked under the gas tank on the frame. You don't have one of these arrangements so only the symptoms are applicable.)
