It sounds like your test is similar to ours in the UK. Your 'plateau' sounds very much like our CBT (compulsory basic training). To get your license though, you have to follow that with a road test. It's a hell of a price to pay though. Here you can take lessons before taking your road test and they can be pricey too - but they are optional.
I love riding in France. I came over from the UK twice last year, and will be going again next year. I'm coming down to visit 'les loups du Gevaudan' (Lozere)

Last time, I nearly fall because I had to do an "urgency stop" while the soil was still wet. pfiouuu I release the brake at time!!
