I'm using a
Fujifilm FinePix A800 on a a camera mount that I strap to my gas tank. The sound is recorded by the camera. I use Microsoft Movie Maker to do all the editing.

Sweet. Lots of people don't realize NJ has places like Sussex county, the popular image is based on the Turnpike & the shore, I think. Unfortunately I have two hours of riding to even get to Sussex.
Where is the that wood-decked bridge in your pics?

That bridge is along the "scenic byway" (rt. 97 I think) that starts right over the border in Port Jervis, NY and runs through rockland and sullivan counties alongside the delaware river.
Is there any good riding down south? Like through the pine barrens?

Not so much, although it's worth doing once if you've never done it. My wife and I prefer to go north and run Hunterdon - Warren - Sussex counties. Two strikes against the Barrens: 1- it's mostly flat, there are some curves here and there but they're flat curves; 2- there's not many roads. Well, there's plenty of roads, but the majority of them are not paved. For dirt or DP bikes it's great.
Probably the best rides in the south are down along the Bay. But bring your bug repellent!!
