Ill take a hand off the bars and wiggle my fingers to get feeling back into them, but wont ride for an extended period one handed. Since my bike has a throttle lock I will typically just keep a very loose grip on the bars when highway riding (unless im fighting the wind) helps to keep hands from cramping. Feet are another story, I wish it was possible to put highway pegs on a CX500

i've stretched my legs while riding.
it was on the freeway and it was a 60 mile trip, one way.

I just make a habit of tightening and loosening different muscles while I'm riding. Keeps your legs from stiffening up. 4 or 5 hours in the saddle straight is not unusual for me. And if I don't do that my legs stiffen up, otherwise I'm fine.

when my legs get tired or cramped i will wait until im on a straight stretch of road with noone behind me, slow down to around 50mph or slower and just stand up on the pegs for a short period. Its great for my knees and my "O Ring".

I take my left hand off and turn around to look a the bikes behind me, I use both my left hand and right hand for signals, if my back gets sore I take both hands off and straighten up. I also stand up and stretch my legs. Occasionally I do these things while the bike is moving.
