i also thought about loosing my baffles, like one of the others who responded, not everyone likes the same thing, do it!
I heard both, yes you should rejet, no dont worry about it?
from my understanding, if you dont rejet, you do change your back pressure, and it could effect performance, but it'll propably blue youre pipes at the manifold. most bikes are there or going to get there anyways.
if you got removeable baffels that are aesy to reinstall, then you have nothing to worry about.

OK this is something I know about since I just sold my 99 Marauder.
I put Vance & Hines pipes on the bike when I was living in Vegas. Yes they sounded louder and tougher. Alot Louder. Almost annoyingly loud. These pipes also looked better.
There really was no change in performance, except maybe a tiny almost imperceptible loss of horsepower. So insignificant that I'm not even sure about it. Hell there could have been an increase.
When I moved back to Texas, and all the disgusting humidity I noticed a slight lag or flat spot when accelerating in first gear when the bike hadn't been ridden for the day IE- warmed up but not run up through the gears yet.
This led me to rejet as I had been warned that I might have to. Ordered kit from Dynojet. Pretty easy to install, never done anything like that before. However, not a task for the faint of heart and took hours not a professional 20min. By the way, the Mikuni carbs are made of the cheapest pot-metal aluminum so be careful you don't destroy anything critical if you take on a task like that.
Once put back together, the bike idled beautifully, yet bogged down at the first oportunity. S**t! That lead to foam filter pods and the hottest plug for that model since I figured I had gone too rich. Had to syncronize the carbs. Again a onerous task for someone that had never done it before.
Bike runs great! Gets way better mileage than stock! Still a little too rich since of the odd backfire every now and then when decelerating but accelerates like a bat out of hell!
I did all of the work myself without help except from a shop manual from suzuki.
What I learned from this was that changing vital S**t on your bike can be a real can of worms and can lead to unexpected and unwanted results as you can see from my testimony. I was just lucky it worked out. The bike since sold, really should have a professional or someone with the right knowlege to go over anyway to iron out the wrinkles.
Can you believe I'm contemplating doing it all over to my current bike? What an idiot- can't leave anything alone... gotta make it mine. Except this time I'll get the help from a pro.
By the way- I still have that shop manual for the VZ800 and I am considering selling it... to a good home, (hint, hint)...
