Update:
So it's off we go to learn how to ride a motorcycle (again)... We just signed up for our basic motorcycle course (August 3, 4 and 5); they said the bikes include the Suzuki 250 and Kawasaki 125. Then after completion (assuming I pass!!!!), it's off to write the motorcycle written test (while waiting 3-4 hours at the DMV) and then they give us our motorcycle licence.
I'll write up a blog as it goes. It will be interesting to see the difference of what I have learned and what I haven't and how many bad habits I've picked up in the 18 years of riding.

Update: Great news! With the MSF course passed and the DPS (that's the Texas DMV) motorcycle "written" test (it's actually not written anymore as it's on a computer) passed, my M class licence will be arriving in 4 weeks.
