I'd look for something at least 800cc. Other than that it would probably be best just to shop around and sit on some different bikes to see what fits best.

You want a big frame to carry your big frame, look in to the Yamaha Silverado series. I own one, a Midnight, and I'm glad I bought it. Big and heavy (1700 cc, 700 lbs) and about $10K cheaper that the same thing in a Harley.

Silverado is a nice bike... but 750ccs? I was under the impression that they came in either 650cc's (like the regular V-Stars), or 1100cc's. Personally, I feel cramped on the smaller 650cc V-star frame. I am 6'0 230lbs. The V-Star 1100 is nice, but I personally prefer the size of the Vulcan series. Plus, The Vulcan series has niceties such as Fuel injection (No carbeurator maintenance like on the V-Star) and hydraulic valve adjusters (no valve adjustments like on the V-Star).
For a the exact same price as the Silverado 1100, I think Kawasaki is a better buy. You get a bigger engine, a longer wheelbase (bigger frame), hydraulic valves, and fuel injection.
I would spend my money on a Vulcan 1500/1600 or a VTX 1300.

The Midnight Silverado has the 1700 cc out of the Yamaha Warrior. I like the bike, but owning a bike is a personal thing. Buy what you like.
