Rejetting a Suzuki GZ250. Need some advice.

I have an 06 GZ250. I wish I would have bought a bigger bike to start on, but I'm stuck with this one for now. As a result, I've decided I want to try and squeeze every bit of juice out of this thing as possible.

I took the carb off today and shimmed the needle. I also plan to drill the baffle. I'm going to rejet but I'm not sure what size to use. The stock main is a 120 and I bought a 122.5 and a 125 to replace it. I'm just not sure which to install. Since I'm drilling the baffle, I would think that a 125 would be fine but I'm still not sure.

I'm also getting mixed answers on whether or not I need to open up the pilot screw. One guy says leave it alone and another says open it up a quarter turn or so. What should I do?

Install the new jet and if it is running rich or lean, adjust the pilot screw accordingly.
