Does a 250 2 stroke have heaps more power than a 125 2 stroke?

Yes. But it is easier to control as it is spread out through the powerband and not as peaky.
No Witnesses....

is a 250 more faster than a 125 and would it be possible to put electric start on a yz250

Tops speeds are close, the 250 will be a few mph faster. It will reach top speed sooner though.
The short answer is 'no'.
It's a motocross bike, built for racing. Easy starting is fairly low on the 'Things Winning Race Bikes Have' list.
No Witnesses....

So a 250 wouldnt struggle accross the beach or wont strugle up sand hills as much as a 125 would?
