Just to give you an idea

Kawasaki ER-5 (common learner bike for training schools here)
BHP 48
Torque 32 lb.ft @ 7500 rpm
Standing Quarter mile 14.9sec @ 89mph

Generally seen as a very mild mannered 500.

Kawasaki Ninja 500R, about 60hp, 1/4mi in about 12.9 seconds. it is considered an excellent first sportbike.

Suzuki GS500, 47hp, 1/4mi in about 13.5 seconds. Another excellent first sportbike.

Suzuki SV650, 73hp, 1/4mi in about 12.2 seconds. not a bad choice first bike for a new rider who can restrain their right wrist.

Suzuki Bandit 600, 83hp, 1/4 mi in about 11.9 seconds, comparable to the SV650 just a little heavier and a bit faster on the top end.

Suzuki Katana 600, 83hp, 1/4 mni in about 11.9 seconds, the bandits fully faired cousin.

these bikes seem to fall into the realm of what you are looking for.
