I have been riding for about 4months now and have logged about 800
miles on my Twinstar.
I was in my local bike shop and I have fallen in love with a 07' FZ1.
Is this something I could transition to? I realize there is a great deal more power on the FZ. But, this may be something I just have to have.

Only 800 miles?? Why don't you put a few thousand on it, and then move to an FZ6, and then an FZ1 if you feel the need. The FZ6 is more than enough power for anyone on the street... the FZ1 just gives you the benefit of crappy gas mileage, high insurance rates, and too much power to ever use.
Sooo, no. Don't get the FZ1... it has more than 10 times the horsepower of your twinstar, and you'll likely just get into trouble and drop it, and on a new bike, you will be kicking yourself. I would recommend moving up to a used FZ6 after a few thousand miles on your twinstar, and THEN after a couple thousand miles, if you really want to, you can move up to a FZ1.
800 miles is nothing. Just take a little more seat time and make sure you are 100% familiar with all of the basics so you don't have to think about a thing. Because if you get into trouble on an FZ6 or an FZ1, hesitation and panic will lead to a handful of something (be it throttle or brake), which leads to a nice tumble along the asphalt.
