2005 Honda VTX1300

MSF instructors and friends say this bike is fine to start on. How do you guys feel?

IMHO I would say no...

Look for a used bike in the 500-750 range and learn how to ride it... You will be less upset as well when, or if you drop it. A smaller bike in good shape will hold it's value pretty well and you may be able to recoup a good portion of your costs on the bike when you're ready to upgrade in a year or three...

No MSF instructor that I know would say that is a "fine" bike to start out on... unless they'd been riding so long, they completely forget how challenging the new skills can be, especially on a heavy bike.

You CAN start out on it, but I'd search for something a bit lighter weight. If the argument is "but you'll want to upgrade in six months on anything smaller" ... why is that a problem if you're buying used anyhow?

"Starter" motorcycles tend to hold their value and be in high demand at resale, provided you take decent care of it.
