This is my first attempt at installing a clutch on a motorcycle. I have the plates installed properly but since I don't have an impact wrench I don't think
that the nut is tight enough. The plates wobble and I don't think that they should. The other problem is that after I closed everything up the clutch lever would not contract. I bled it, which allowed it to contract but now there is no tension on it and in a nut shell, the clutch doesn't work.
Any suggestions on what I did wrong and what to do to remedy it?

Easy with the impact gun for now.
It sounds like a hydraulic problem with the clutch actuator or something hung up/not aligned with the clutch basket or activation rod.
Probably the safest thing now is to tear it all apart and reassemble it again, making sure the slave cylinder piston is seated in it's bore and fully retracted. Also check that the clutch basket is properly installed on the tranny input shaft, with any key or alignment system correctly lined up.
Does your clutch use a single diaphragm-type spring? If so, is it correctly installed with any washers/spacers in the correct order and not hung up on something?
