Salvaged bikes

Hey all, didn't know where to post this so I'll throw it out in here and if you guys need to move it so be it. Sorry if it's in the wrong spot.
So, even though I've had my bike less than a month, I've still got an itch to get a new one. However, my skill level isn't up to a new sport bike yet.
So, I'm thinking of doing a repairable/salvage. I've got a few years to work on it and it may save me some money while giving me a good opportunity to learn some things about motorcycles.
So, my question here is, has anyone ever done anything like this? If so where's a good place to look for a bike. I've seen insurance auctions, looks like they have a decent selection. Any thoughts on what I should and shouldn't look for? What kind of damage would be too much for a salvage job.
