I just recently dropped my bike at under 2 mph on a sandy turn( I'm such an idiot ) I broke the left turn signal, and scuffed the engine cover and handlebars pretty bad, but that was it. Is there anything in particular I should check after a drop like that? Thanks

Just the obvious stuff you found already. At that speed, the only damage should be to stuff sticking out on the bike and bodywork.

Bouble check your triple clamps bolts and such. The fork can twist in the clamp if they weren't properly tight to start off with. Sometin=mes the clamp bolts break. Also carefully check your handlebar clamps. A broken bolt or stub can make for a hairy moment if the handlebars get loose or come off.

Thanks for the suggestions. Is there a possibility that something could have happened to the carbs in a fall like that? The bike seems to be running fine at the moment, but I've never been one to have very good luck.

Not likely. The fall you're describing really wasn't that catastrophic. The carbs are attached to the engine via rubber boots to dampen engine vibration, but they also more than likely kept the carbs nice and safe from the jolt. You gotta remember, dirt bikes use pretty much the same type of carbs and mounts and those bikes fall down hard all the time. It's only natural to write the whole bike off in your mind, but it's probably not nearly as bad as you think it is. Hop on eBay and replace your scuffed pieces, and get back on that thing!
