Brumapple pie

Well racked the apple jack tonight(switched it to another container) This years edition is really quite tasty much better then last years already and it's still fermenting. I had to do a taste test it was just screamin at me

It is at 12% alchohol now and still fermenting we will see, I hope it doesn't go past 15% then the taste will change. I put a pinch of cinamin in this time and it melded great tastes like apple pie with a kicker

To be honest I make apple wine from my apple tree every year. This year as was the case last year I couldn't get much juice. I bought some apple juice as well. I take 5 gallons in all, put it in a bucket add 10lbs of sugar a pinch of cinnamon and turbo yeast put a lid on it with a one way valve let it sit for 7-10 days. Then switch it to another container for another 10 days and repeat. I then take 2 gallons and redneck distill them freeze it and then turn it upside down whatever drains out BRANDY but then you have to let it set and take only the bottom 2/3 of it as the top 1/3 is methanol "hangover juice" and mix it into the wine and rack it a 3rd time. After the 3rd rack I bottle it as the wine will clear up by then and the hooch gives it a kick and a half and well then I spend the winter enloying the fruits of my labor

LoL, bag fiberglassing, I think I'll take this up as a winter hobby instead. (-:
Right now, all we get from our apple tree is Halloween bobbing and a steady supply of apple pancakes throughough the winter. That, and the dogs have all the 'dessert' they could ask for.
