What is the proper way to adjust a chain?
I've heard of like 1" deflection but I've never really heard from someone who knows bikes.

The amount of slack in the chain varies depending on the bike and the geometry of the sprockets in relation to swingarm pivots and length, and suspension travel..... but 1 inch play in the middle of the chainrun is quite a bit for a streetbike. Not out of line for a dirtbike, though.
Most roadbikes are ussually about 3/8 - 1/2" of slack, but check the service manual for your specific bike.
