Downshifting?

When you guys down shift, wether it be to slow down or just down shift, do you keep the engine reved a little bit or do you just completely close the throttle and let the rpm's rise high?

I always rev-match downshifts. Less clutch wear that way and an overall smoother ride, methinks.

Always rev the throttle to match the role of that gear.

no different than driving a stick shift cage. Rev matching is your friend
