Choke and Idle Question

I have a 1994 Ducati E900. I've posted a couple times about this bike because I am repairing it. Again, I am very new to motorcycles (I'm only 17) and am trying to figure things out. Alright, so I had the bike jetted for altitude because I live in Denver. I didn't run it for awhile after that because of time constraints and me still repairing it.
The first problem I have is with the choke. I push the choke lever down so it is on, but after a couple seconds the lever snaps back to the off position. So I end up holding the choke down while starting it and letting it rev. How can I fix this choke?
The second problem is with the idle. I have yet to get it to idle without having the choke on or revving the engine. It will idle for a bit and then turn off. Is this a problem with the gas? (The gas is a couple weeks old) A problem with the mixture? What do I need to do to get it to idle. Any help would be greatly appreciated. Thank you.

I have another question that I forgot to ask. The flash relay for the turn signals was busted in the crash. So i bought a new one from the manufacturer. I also put on some new turn signals in the back. These turn signals are LED. When i turn them on they do not blink or flash. They just turn on dimly and pulse. When i switch the wires around for the relay the lights just turn on full capacity with no pulsing or flashing. Is the problem with the relay? Or the LED turn signals, since the old signals were not LED?

Is the choke on your handlebar or near the engine? This is a really simple problem. Friction will make you choke hold, don't know exactly the mechanism of your ducatty tough

What speed is the engine running before it dies? If it's below 1000 RPM it's too slow. And you should adjust your idle screw. The idle screw is basically an adjustment that will control your idle speed. It 's located on your carbs.

What you can try here is put a real light, like the original ones. Nothing permanent but just for test. If it blinks then your LED lights don't pull enought current for your relay to blink.
Led lights have a polarity, which means that if you connect incorrectly they won't light, or only light very little. You can test to know which wire is for the +12V and the other is the Ground by connecting it to the battery and see when it emits light. The red wire of the battery represents the +12V and the black wire the ground.

1. The choke is on the engine. Do you mean if the choke is on the engine the friction from the engine will cause me to have to hold the choke? If this is the case is there no way to fix this? It's just something I'll have to deal with.
2. I have no idea what speed it is at. At the moment I have no dashboard. I'm in the process of repairing it. I will try and hook up the odometer to see. If it is the idle speed will it be easy to adjust?
3. Alright I put one of the original lights on. I then proceeded to test the signals. The signal would light up and then dim down, but this only happened once. I tried connecting the wires differently (these are only two wire signals) and I couldn't get them to flash. I tried switching the wires for the LED lights also and had no luck. Does this mean my relay is the problem? I had the motorcycle dealer here order that relay, but the one I received is different than the one previously on the bike. I gave the dealer the part number though, so I'm assuming it's the same relay just different look. If it is the relay, can I buy the correct one at any motorcycle shop? Or do I need to order another one?
