How do I find the submodel on my bike? What does a submodel look like (Is it "Road star" or SV16AT?)

Like a Ninja being an EX also?
Ninja 500 and EX500 being the same bike?

I'm getting insurance on my Road Star Silverado and the insurance company needs the "Model" and the "Submodel". The owners manual says the model is "XV16AT(C)" so what is the submodel? "Silverado"?

No on is replying because no one is really sure what the answer is. You're going to have to talk to your insurance company for a better explanation.
To me model would be like: Honda Civic
And the submodel would be: Hatchback or coupe
I'm not really sure how that would translate across to a standard bike unless it's something like the C50T which is the touring iteration.
In all honesty I think the question doesn't apply to your bike.
