Replacing tires on vintage bikes

Hey all,
It's time to replace the front tire on my 79 suzuki. The originals measure 3.00x18 front and 3.50x18 rear.
First question - is there any problems associated with switching to equivalent metric sized tires if I find the ones I want, ie. 80/90-18 or there abouts.
Second question - I would like to get a somewhat wide tread pattern with lots of blocks so it would be good for dirt road/snow riding, as well as pavement. Unfortunately, most of the street oriented enduro tires only seem to come in 21" sizes. Any recommendations for somewhat dirt/snow oriented tires in 3.00x18?
Third question - any issues with mounting tubeless tires with tubes (on rims made for tubes)?
