are MotoGP riders generally better than say, AMA superbike riders or any other racing org?

Absolutely.

The machines that they ride are on the cutting edge. Nothing close to anything as powerful and refined as their machines is available to the public.

If you watch closely, you see that the machines are rarely ever stable.
