if you have a good relationship with a dealership or sales person in your area what you could also do is let them know what you are looking for. They might get one in on a trade and hold it for you or might hear about a private sale as well.
kind of like looking for a job sometimes, it's about who you know....or blind luck

I went to the store and sat on a ninja 500. In the dealers words, I 'dwarfed it'. I am about 6'3'' and about 250lbs. So I am a big dude. My knees were about 4-5 inches from the top of the tank.
Any reccomendations? Perhaps a booster chair (joke)?

but speaking of height and weight... there was another guy here asking for what bike to buy as an upgrade after riding his EX250 for a year.
he's 6'7" and weigh almost 300lbs. i dunno how he pulled off riding a 250 that long, but that should at least give you an idea.
the 500 and the 250 have different ergonomics, try both.
your weight isn't going to be a problem on the 250 or the 500, either will be fine to haul you around (i'm in the same weight class but at 6- 6foot 1 height) it's all about not slamming your knees into the bars or something

tell the dealer to go jerk it, im nearly the same siz, and im gonna dwarf any bike short of a goldWing, thats something i understand, when you go to the dealership find one who isnt on commission, talk to him. i was at a dealer once and a salesperson noncommission reccomended this noob get a 250, he walked off to get some paperwork, and by the time he got back this commission salesman had already convinced the guy to buy the gsxr750 and had him picking helmets.
I don't have much respect for salespeople anymore. Really, I would never go buy an expensive product without doing all my research first and making my own decisions.
No offense to any of the good guys in retail, but honestly I think they are all just in my way. I want to go to a store and buy a computer/bike/whatever without talking to the sales staff. They waste my time and annoy me trying to upsell me. The maximum assistance I want for them is answering specific product questions and operating the cash register.
They have no shame. You can't even call the phone company to ask a question about your bill without them trying to sell you something else. Its outta control.
