So to randomly alter the exhaust of a highly tuned performance sport bike by going to straight pipes almost guarantees you'll screw up the balance, sometimes producing intake and exhaust pulses that work against each other and really degrade things.
A cruiser engine is typically not as performance oriented so the intake and exhaust are not as finely tuned. Going to straight pipes may still produce performance degradation, but you may get lucky and improve the tuning, particularly with a "Jessie James" type chopper where the exhaust is nothing more than a randomly tuned piece of sculpture. And even if performance was reduced, it probably wouldn't be as noticable since the bike aren't designed for that.
ok, if you took say an r1 threw some straights on it and had it jetted/dyno tuned and all that could you maintain the engines performance?

If straight pipes were the answer for sportbikes, Moto GP grids would be pretty dam loud (yeah, I know the niose regs and all, you get my piont).
Dragbikes prove that you can tune a sportbike engine to work with them.... at exactly one certain RPM and no others. Not the answer for rideablilty.
