i just wing it KarateChick, but i'll see if i can get some stuff down...here is my easy appetizer that is pretty close to SweetTooth's pizza

Title
Fast Flatbread

Serves
2-6+

Ingredients
olive oil
italian seasoning
flatbread or premade pizza shells
optional: fresh minced garlic

Directions:
heat the grill to a low heat
brush olive oil on top of the flatbread
sprinkle a small amount of italian seasoning onto the bread
if you want some garlic, put a little fresh minced garlic on there
put the flatbread on the top rack of the grill until crispy

All in all, it's a pretty simple way to make a snack or appetizer and people think it takes more effor than it does. You can also use these breads for burger buns if they aren't too big or put some cheese on them.


Title:
Bok's Potatoes

Serves:
2-6

Ingredients
2-6 potatoes
1 each red yellow and orange peppers
lemon juice
fresh minced garlic
italian seasoning
olive oil
salt and pepper

Directions:
- Slice potatos into chips
- cut peppers into 1/4 inch pieces
- put the peppers and potato into a bowl and drizzle olive oil over them
- add one clove (to taste) of fresh minced garlic mixture
- add about a tablespoon of lemon juice to the mixture
- add a small sprinkle of salt and some pepper
- mix them up by hand to coat them
- depending on the amount of potato, get 1-4 pieces of tinfoil
- put a double handful of mixture onto tinfoil and make a pouch, do this until you have made a few pouches
- heat your grill to the heat you will be cooking your main dish
- place the foil pouches on the top rack and let them cook for about 20-30 minutes

I usually put the potatos on when i have just put the smoke pouches in, this lets them cook slowly while the smoke does its thing...after 15 mins or so it's time for whatever main meat you will be grilling and this lets the potato cook and be done pretty much at the same time the meat is done.

Not my personal recipie but a tried and true one time and again.


Cream Cheese Flan
A Cuban Tradition

Ingredients:
1 1/2 cups sugar
1 cup water, divided

1 8-ounce package cream cheese, room temperature
1 14-ounce can sweetened condensed milk
5 large eggs
1 large egg yolk
1 cup canned evaporated milk
1 teaspoon vanilla extract
Pinch of salt

Preparation:
Preheat oven to 350°F.

Prepare the caramel
Stir sugar and 1/2 cup water in heavy medium saucepan over medium-low heat until sugar dissolves. Increase heat and boil without stirring until syrup turns deep amber, occasionally brushing down sides of pan with wet pastry brush and swirling pan. Immediately pour caramel into 9x5x3-inch glass baking dish (you can also use a 9” round pan), tilting and rotating dish to coat bottom and 2 inches up sides with caramel. Cool. Use caution when handling hot sugar, it can burn you easily.

Prepare the custard
Using an electric mixer, beat cream cheese in large bowl until smooth. Gradually beat in sweetened condensed milk, then eggs and yolk. Add evaporated milk, vanilla, salt, and remaining 1/2 cup water; beat to blend. You will still see little pieces of the cream cheese and that’s okay, they’ll melt as they bake and incorporate into the batter. Pour custard into caramel-lined dish. Place dish in 13x9x2-inch metal baking pan. Add enough hot water to pan to come 1 1/2 inches up sides of dish. Bake until knife inserted into center of flan comes out clean, about 1 hour. Remove flan from water bath. Refrigerate uncovered until cool, then cover and refrigerate overnight.

Run small sharp knife around flan to loosen. Firmly hold dish and platter together and invert, shaking gently to un-mold flan onto platter. Make sure the platter has a little lip around the edges to catch the caramel. Scrape caramel syrup from dish over flan, garnish with fresh berries and enjoy!

Makes 8 to 10 servings.

No Bake Belgium Chocolate Cheesecake

9” Spring Form Pan

Crust

1 ¼ Cups Graham Wafer Crumbs (Alt. Substitute 50% with Oreo Cookie Crumbs)
¼ Cup Sugar
¼ Cup Butter (melted)

Filling

2 Envelopes Dream Whip Topping (Prepared as per Pkg instructions) Set aside & chill.
2 – 250g Pkgs Light Cream Cheese
1 Cup Sugar
2 tsp Lemon juice
2 tsp Vanilla
1 ¾ lbs Belgium Milk Chocolate (Melted)

Garnish

12 Belgium Dark Chocolate Wedges
Shaved Belgium Dark Chocolate


1. Prepare Dream Whip Topping as per instructions and refrigerate.
2. Combine crumbs, sugar (first amount) and melted butter. Press firmly into bottom of the Spring Form pan.
3. Beat softened cream cheese and sugar until smooth.
4. Add lemon juice and vanilla.
5. Add melted chocolate and beat until completely mixed.
6. Slowly fold in the chilled Dream Whip until completely incorporated. (You may have to stop the machine and do this by hand to help out the process.)
7. Pour into Spring Form pan and chill over night to set.
8. Garnish with chocolate wafers and shavings. (Or top with a chocolate sauce as an alternative.)

Come on Verm....theres got to be something you can cook. I'm sure if you think about it really hard you'll come up with something.

Why thank you, I took an existing recipe for the basic cheesecake that would normally have a fruit topping, and converted it to something all my own.... Dropping the chocolate will give you that basic cake which is then great with a blueberry or raspberry or ??? topping. :mrgreen:

dont mock beans and hotdogs.... bean dogs and Alphagetti dogs are awsome when your doing a shore lunch when fishin.

Porcupine Meatballs in mushroom gravy

ingredients

Meatballs
1 lb hamburger
1 cup breadcrumbs
1 cup warm milk
1/2 cup uncooked rice
1 egg
1 small oinon chopped finely

Mix these togther, and form into golf ball sized meatballs

gravy
1 can of cream of mushroom soup
1 cup of water
1/2 tsp ketchup

mix these togther and spoon over the uncooked meat balls


take one baking dish, line with foil, place meatballs in dish and cover with the gravy. Bake in the oven at 350- 375 degrees for 1 hour 15 min or so...

this is probably a old recipie from somewhere, My mom gave me a few recipies when I went to college, so if a college kid can make them, anyone can!
