I'm not saying you need to have them at DVD-R quality. In fact I do not. I'm very happy with my 700meg video files. But I have about 400 of them now. I've got the better part of a terrabyte of storage now, though some of it is redundant. I keep all my songs on three different HD's and my favorite movies as well. One of my HD's isn't even installed, I sub it into my usb case once a month and copy over new files, then it goes back into the anti-static bag and in my drawer. Paranoid I know, but the stuff I have on there took YEARS to acquire, so it's worth the extra effort, as I'd never get it all back.
I lost a years worth of family photos because a HD went down, so those also live on three HD's. It's funny because annoying as hardcopy photos are, they're a lot harder to destroy then digital ones.
I've got about 2500 songs - about 11 gigs. Remember compression makes a huge difference.
If you're going to watch a movie on your iPod (or creative in my case) you're better off not trying to compress it further then what it came in. Personally, I don't want to, nor do I (except in rare events) attempt to watch movies on my creative. Why? Because it is a 2-3" screen. And I've got a 21" widescreen on my desk. If I want to amuse myself elsewhere I read.
Of course I'm generalizing from a single example here, but everyone does that. At least I do.

Wow... thought my collection of songs was bad... It's only 7.5GB. (About 2500 songs/skits) Don't do movies usually, never really watch them, I tend to just watch tv or internet movies. Also, let me intervene in the crazy friends category. Friend of mine just graduated from Colorado State with a bachelors in Computer Science. At his house he has 2 servers, 7 desktops, and 1 laptop. Overall he has over a TB of data, with around 750 Gigs of that belonging to music (all completely sorted, named, titled, bit rates, EVERYTHING). He also has another 200 gigs of Movies, and the rest is work/school related.

I have right at half a terabyte on my home system.
Got a couple of friends who have over a tera on their main machines.
They're nerds though. So am i for that matter. Most folks dont need 14 different series of anime per hard drive though.
I did monkey around with recording the streaming audio bit for awhile. Then realized i don't like much of anything thats new, and i've already got plenty of the old.
