A trip such as the one you want to take will require a lot of planning and research. The members here may be able to scratch a couple of suggestions off the tops of their brains, but really you should be purchasing guide books written by folks who have actually taken on this type of road trip. You'll want to be prepared for all sorts of situations.

This website has a ton of information about a guy who recently rode all over the world on a Yamaha R1. Certainly a completely different bike, but there is probably some other information there which will apply to you. I would suggest looking for an Indian specific forum or dealer (if they still have dealers) for info specific to your bike.

Take anything and everything you can think of and can pack on the bike. I don't imagine there's a whole lot of modern Indian spares floating around in South America.
If I was doing it, I would take a bike with a better chance of finding dealers on the way, like any japanese bike or a BMW. As long as nothing major breaks, you'll be fine. Trying to find critical engine components might be a task......

As for your question, maybe you could post it on an Indian owners forum or have you already done that? But seeing as how the 2000 models were still using S&S built Harley clone motors (no insult meant here, just a fact) I would say bring along the basics like spark plugs, oil filters and signal light bulbs. A well equppied tool kit is a must, including a tire puncture repair kit.
If you do run into trouble while you're down there, contact the sole Harley dealer and hopefully they could help you out:
