In the UK, riders tend to nod when going in opposite directions and wave when they pass in the same direction (left hand).

Moped and scooter riders never seem to instigate the acknowledgment or get acknowledged. Sometimes I do and sometimes I don't.

I was on a country road a few weeks ago and a police bike was going in the opposite direction and he waved at me, so I nodded back. I was quite surprised by it.

I prefer nodding, so I can keep both hands on the bars.

Cool wave of the day:

I'm tooling through the Casa Paloma shopping center, and there's a couple gearing up to climb onto a tourer out front of Buca di Beppo. They hear my motor and look, so I put my hand up and they wave back from halfway across the lot.

I don't really pay attention to how I wave (peace sign, open hand), but I normally wave to anybody on 2 wheels. I'm on a sportbike, and I notice that other sportbike riders wave back, but not all choppers or cruisers.

Motor cops.

I've waved at three now.

Not even sure they saw me, though I don't see how they'd miss me if they were riding with proper attentiveness.
The Motorcycle Cops out here wave at me. The first one waved at me before I waved, I almost freaked out. I've had a couple more wave (or maybe it was the same one). I actually came up to a red light next to a Motorcycle Cop and talked to him until the light changed.

When I'm alone I get waves from most sportbikes, and some cruisers, when my husband comes along on his Honda we get waves from most cruisers, the usually sportbikes and quite a few HD's.

Around here sportbikers favour the sideways peacesign(my personal favorite), Cruisers a more subtle wave and the HD's mostly a headnod!!!
