I learned on the GZ-250 also. during the two days I had two different bikes. I liked the first one better. Compared to the 250 my Suzuki M50 shifts like butter.
The bikes that you ride in the class are very well abused bikes so don't compare those for how well they shift, but for how much abuse they can take and keep on going.

I was surprised too how great my Harley shifted compared to the learner bike. Though I rode it a tiny bit before the course - I never shifted gears.
I stalled it a TON on my first real ride, but then I realized I was downshifting to SECOND gear, and coming off the line in the wrong gear. Oops.
Still learning (and stalling) but loving it.

Yeah hills are the worst. I was on a really good streak of not stalling, then one day I went to a busy small town with alot of stops and stalled 3 times
.
The other day i stalled on a hill rolling backwards isn't too fun. It's going pretty good though. I have 380 miles on the bike, most are mine so.
