I'm looking at my first bike possibly being a 1989 Yamaha DT-200? Is this just way too old to consider?
I like the idea of a dual-sport bike but I'm wondering if I can take this thing on the highway at all?

Well...I did 50 mph on a DT50 from 88 or 89 and I'm six feet tall and 210 pounds hahaha. That thing was wound right out and screaming.
Keep in mind that the DT200 is a two stroke. Not really as user friendly as a four stroke. The DT200 is as powerful as a ninja 250 and 100 pounds lighter.
